Testing for protein, simple sugar and complex sugar

Aim: To test if a sample of food contains protein, simple sugar and complex sugar

Equipment: Bunsen burner, test tube tongs, Benedict's solution, a sample of food, Test tube, sodium hydroxy(NaOH), copper sulfate(CuSO4)

Method:
Protein:
1. Place about 2ml of the sample into a test tube and add 5 drops of sodium hydroxide.
2. Add 5 drops of copper sulfate.
3. Shake the test tube gently from side to side.

Simple:
1. Place about 2ml of the sample into a test tube and then add 5 drops of Benedict's Solution.
2. Heat with a Bunsen until it changes colour. Do not boil.

Complex:
1. Place about 2ml of the sample in a test tube.
2. Add 3-5 drops of iodine and mix.

Results:

Protein: it changes the colour that means there protein in the meat.

Simple:

Complex: it changes the colour of the bread to purpler that means there complex sugar. There no complex in the meat because of the meat changes to a yellow colour.

Conclusion: Changes molecule means changing colour.

Testing for Protein - the Biuret Test

Aim; To test if a sample of food contains protein

Equipment: Test type, sodium hydroxy(NaOH), copper sulfate(CuSO4), food sample

Method: 1. Place about 2ml of the sample into a test tube and add 5 drops of sodium hydroxide.

2. Add 5 drops of copper sulfate.

3. Shake the test tube gently from side to side.

Results: egg went from yellow to light blue and then purple.
Milk went white to purple.

Conclusion: Changes proteins molecule means changing colour.

Testing for simple sugars and complex - the Benedict's test

Aim: To test a sample of food to determine whether it contains simple sugars.

Equipment: Bunsen burner, test tube tongs, Benedict's solution, a sample of food.

Method:

1. Place about 2ml of the sample into a test tube and then add 5 drops of Benedict's Solution.

2. Heat with a Bunsen until it changes colour. Do not boil.

Results: the colour changes by the heat

Conclusion: Changes molecule means changing colour.


Testing for Complex Sugars - the Lodine Test

Aim: To test if a sample of food contains complex sugars.

Equipment: Test tube, food sample, iodine solution.

Method:

1. Place about 2ml of the sample in a test tube.

2. Add 3-5 drops of iodine and mix.

Results: the Bread changes colour - white to black to purple

Conclusion: Changes molecule means changing colour.
